That year, a Fr6nch food chemist suc- ceeded in making a cheap but- ter substitute because butter had supposedly become scarce and expensive in the wake of a European cattle plague.. The word margarine is said to come from the Greek word for pearl, because the original version was hard, white ad glossy It also may have been less than appetizing, since it was thought to be made from beef fat, milk and chopped sheep's stomachs and cows' udders, all treated with heat, lye and pressure. In its early years, mar- garine was a meat product, which was dependent on the beef and dairy industries and whose main appeal was its low cost relative to butter. In that period, it was exclusively a food of the poor. In the early 1900s, food chemists discovered how to harden liquid oils by reacting them with hydrogen in the presence of metal catalysts and heat. Vegetable and fish oils became raw materials for margarine, weakening its ties to the meat industry Allegedly, manufacturers then bought up the cheapest oils they could find throughout the world, reduced them all to bland neutrality through chemical processing, and hardened them into mar- garine, which remained pri- marily a food of the poor. By the 1920s, only vegetable oils went into the product, and over the next 30 years busy food chemists using a host of chemical additives greatly improved the spread- ability, appearance and, espe- cially, the flavor of mar- garine, always working toward the goal of greater resemblance to butter. The improved alpeal was still its lower cost, but now margarine sales increased enormously, seriously threat- ening the butter industry.. The butter people suppos- edly responded with a bitter and dirty political fight to hamper sales of margarine, but in the end, they were to lose out because of an unforeseefi change in con- sumer perceptions. In our lifetimes, people have come to see margarine not simply as a cheap substi- tute, but as a healthy alterna- tive to butter. This change has apparently occurred particu- larly among the educated and affluent. This new view of mar- garine--North Americans now consume four times as much of it as butter--devel- oped along with an awareness of the role of saturated fat and cholesterol in producing atherosclerosis, the degenera- tive condition of arteries that predisposes us to heart attacks, strokes and other cir- culatory diseases. Butterfat is the most satu- rated animal fat in the American diet, and butter contains a lot of cholesterol as well. Many people will admit they prefer the taste of butter, but consider mar- garine better for them. This view is changing again, and some predict that over the next decade, medical research will demonstrate the clear health hazards of eating margarine. Although the danger to our hearts and arteries from large quantities of saturated fat in the diet is a concern, many people do not understand the process of hardening veg- etable oils by artificial hydro- genation creates saturated fat. In fact, the chemical term "saturation" refers to the per- centage of carbon atoms in fats that are bonded fully with hydrogen atoms. The more saturated a fat, the higher the temperature at which it will liquefy When stored in the refriger- ator, polyunsaturated veg- etable oils remain clear and still pour easily Saturated fats like beef suet, bacon grease and butter become opaque and hard in the cold. No matter how unsaturated the oils are that go into mar- garine, they are made more saturated by the very process that turns them into a harder spread. Most brands of margarine do not disclose the percentage of saturated fat they contain. Even though they contain no cholesterol, they still stimu- late your body to make choles- terol when you eat them. So the heart-friendly advantage of margarine over butter is not so great as advertised. The most significant com- parison between the two is the different chemical struc- tures of the component fatty acids. Butter is a natural product, and its fatty acids are structurally similar to the fatty acids in our bodies. The heat and chemicals used to transform vegetable oils into margarine change fatty acids into unnatural forms that may be unhealthy to eat. The body cannot incorpo- rate trans-fatty acids into membranes, and if it tries to do so, deformed cellular structures may result. Eating trans-fatty acids in margarine, vegetable shorten- ing and partially hydrogenat- ed vegetable oils is thought to increase cancer risks, pro- mote inflammation and accel- erate aging and degenerative changes in tissues. Many people want to know if it is better to eat butter or margarine. They should be asking whether it is worse to eat butter or margarine, because both are concentrat- ed fats that contribute to the unhealthy excess of fat calo- ries that most of us consume. Youmight be better off keeping both of them out of your house, if you cannot use either in moderation. But, if forced to make a choice, use the real thing (butter) in small amounts. One batch of lip balm will fill about 72 tubes. One customer wanted a pepper- mint lip balm, but Williams said she was worried about adding too much peppermint, which could result in burn, ing when applied to the skin. Some prefer natural prod- ucts to the mass-produced ones found in the store. Williams thinks natural prod- ucts are more compatible with the skin and body, whereas the more we learn about man-made, synthetic products, the more we learn they aren't safe. Williams' skin care prod- ucts are sold at Heard's Market in Litchfield and she has had booths at several craft fairs. She offers her items at a cheaper price than items found in many stores.
