8A Wednesday, March 4, 2015 Feather River Bulletin Red Quinoa Tortilla Soup Recipe adapted by Nina Harris from realsimple.com 1 red onion, chopped 3 cloves garlic, chopped 2 tablespoons olive oil salt and black pepper 8 cups vegetable broth 1/2 teaspoon chili powder 1/2 teaspoon paprika 1/2 teaspoon cumin 1 cup uncooked red quinoa, rinsed 1 15.5 ounce can garbanzo beans, rinsed 1 cup frozen corn 3 tomatoes, chopped In a large pot heat the oil then add the onion, garlic, 112 teaspoon each salt and pepper. Cook, stirring until soft, 4 to 6 minutes. Add the broth, quinoa, chili powder, paprika and cumin. Reduce heat and simmer until the quinoa is tender, 10 to 12 minutes. Add the garbanzos, corn and tomatoes. Cook for 2 to 3 minutes. Add fresh juice of one large lime or lemon. Serve the soup topped with 112 cup chopped cilantro, diced avocado and tortilla chips. Transfer vegetables with tofu. In the same wok, pour two cups of water, add Bragg, add any liquid from the vegetables. Bring to a boil then put in drained noodles, add more water if needed. Gently toss until the noodles absorb the liquid. Add in the stir-fried vegetables and tofu. Toss and sprinkle with ground pepper and cook for another three minutes. Transfer to a serving dish.
