8A Wednesday, March 4, 2015 Feather River Bulletin Red Quinoa Tortilla Soup Recipe adapted by Nina Harris from 1 red onion, chopped 3 cloves garlic, chopped 2 tablespoons olive oil salt and black pepper 8 cups vegetable broth 1/2 teaspoon chili powder 1/2 teaspoon paprika 1/2 teaspoon cumin 1 cup uncooked red quinoa, rinsed 1 15.5 ounce can garbanzo beans, rinsed 1 cup frozen corn 3 tomatoes, chopped In a large pot heat the oil then add the onion, garlic, 112 teaspoon each salt and pepper. Cook, stirring until soft, 4 to 6 minutes. Add the broth, quinoa, chili powder, paprika and cumin. Reduce heat and simmer until the quinoa is tender, 10 to 12 minutes. Add the garbanzos, corn and tomatoes. Cook for 2 to 3 minutes. Add fresh juice of one large lime or lemon. Serve the soup topped with 112 cup chopped cilantro, diced avocado and tortilla chips.
