6A Wednesday, April 15, 2015 Feather River Bulletin I James Wilson Staff Writer jwilson@plumasnews.com Plumas County Public Health employees decided to put their money where their mouth is -- literally. Public Health launched the $4-a-Day Challenge on April 5 to raise awareness about the difficulties of eating healthy on a limited budget. Employees of the county office decided that if they were going to urge people to give the challenge a shot, they had to as well. The difficulty involved with eating healthy on just $28-a-week, they reported, is eye opening. "I think it's going to create a much better understanding of people in economic tight spots," said Health Education Coordinator Zach Revene. A 2014 profile of Plumas County, provided by the California Department of Public Health, showed a 17.6 percent food insecurity rate overall and 26.9 percent for children in the county. Most of the food insecure in Plun as, explained Revene, work full time or part time. The $4-a-Day Challenge was worded simply, but participants found it to be harder than it sounds. The challenge started April 5 and will end April 26. Participants are to choose seven consecutive days, and spend only $4 per person, per day on food. Public Health urged people to post their thoughts, recipe ideas and photos on the Public Health Community Outreach Coordinator Megan Mansfield weighs her buying options April 6, the day before she started the $4-a-Day Challenge. The challenge is to eat healthy for seven consecutive days, spending just $28 on food. The amount was chosen to match the amount people receive on CalFresh benefits. This amount lasted her the whole week she took the $4-a-Day Challenge. Plumas County, $4-a-day for food is their every day reality and it doesn't end after one week, Revene added. Revene took on the challenge as someone moving to Plumas County and starting from scratch -- with an empty pantry and $28 to last a week. He said he thought it was important to take this approach, since there are so many in Plumas County in that position. To make his money stretch, Revene had to make some sacrifices. The biggest one, he said, was fresh vegetables. "I typically purchase a lot of fresh vegetables. The only fresh vegetables I purchased this week was a head of cabbage and a red onion. In addition to his two vegetables, Revene bought flour, a dozen eggs, three bags of frozen vegetables, a can of diced tomatoes, lentils, red beans, steel-cut oats, vegetable oil spread, salt and pepper. Choosing which items to purchase and which ones to forgo proved to be more difficult for Revene than he thought it would be. When asked on day three how everything was going, Revene replied, "I could use some coffee." Community Outreach Coordinator Megan Mansfield approached the challenge with more prior insight than Reverie. She was previously on CalFresh, California's food benefits program, and knew how to plan her meals around such a small budget. "When I moved to Plumas County, and I couldn't fred a job for five months, I went on CalFresh and it saved me," she said. Mansfield bought grains, lentils, oats, rice, flour, yeast, salt and spices from Quincy Natural Foods and fruits and vegetables from Sav Mor.
