16B Wednesday, Sept. 19, 2012 Bulletin, Record, Progressive, Reporter Milk Advisory Board says 'Got Milk" for academic success Creamy Berry Hot Cereal Serves 4 Ingredients: 1-1/4 cups old-fashioned rolled oats 1/2 cup raisins 2 cups fat-free milk 1/8 teaspoon salt 2 teaspoons brown sugar 1 te poon ground cinnamon 1/4 cup slivered almonds Handful of berries In large microwave-safe bowl, place oats, milk, raisins and salt. Stir to combine ingredi- ents. Microwave the uncov- ered bowl for three to four minutes or until cooked to de- sired doneness. Let it stand for one minute. Stir in brown sugar and cinnamon. Mix in slivered almonds and top with berries of your choice. Oatmeal Waffles Serves 4 Ingredients: I cup whole-wheat flour 1/2 cup quick-cooking oats 2 teaspoons baking powder 1 teaspoon sugar 1/4 cup unsalted pecans 2 large eggs, separated 1-1/2 cup fat-free milk 1 teaspoon vegetable oil 2 cups fresh strawberries (or substitute frozen strawber- ries, thawed) 1 cup fresh blueberries (or substitute frozen blueberries, thawed) Preheat waffle iron. In a large bowl, combineflour, oats, bak- ing powder, sugar and pecans. In a separate bowl, combine egg yolks, milk and vegetable oil and mix well. Add liquid mixture to the dry ingredients and stir together. The mixture should be a bit lumpy. In a separate bowl, whip egg whites to medium peaks with a whisk. Gently fold egg whites into batter. Pour batter into preheated waffle iron and cook until done. Add fresh fruit to waffle and serve. Apple Blueberry Pancakes 1/2 cup applesauce (natural Serves 2 sugar free) Ingredients: 1 tablespoon brown sugar I egg 3 teaspoon baking powder 1 cup whole wheat flour 1/2 teaspoon salt 1/2 cup fat-free milk 1/2 teaspoon cinnamon 1 '2 cup frozen blueberries (thawed) Handful of berries as garnish In ct larBo bowl, otlr all in6"rodl ents until combined. Heat a skillet on medium heat and pour half of the batter into the skillet. Wait until the pancake bottom turns golden brown, flip the pancake with a spatula and cook the other side until golden and cooked through. Repeat with the remaining bat- ter. Banana Breakfast Shake Serves 2 Ingredients: I medium banana, sliced 1 cup fat-free milk 3/4 cup fat-free vanilla yogurt 1/4 cup pineapple juice 1/2 tablespoon honey Combine milk, bananas, vanil- la yogurt, pineapple juice and honey in a blender until smooth. Serve in a tall glass. or Hot Cocoa Serves 1 Ingredients: 1 tablespoon hot water 1 tablespoon unsweetened co- coa powder 1 cup fat-free milk I teaspoon vanilla extract Pinch of salt . Sweetener to taste In a microwave-safe mug, mix cocoa, water and salt until co- coa powder is dissolved. Add milk to the mug and heat in microwave. Do not let milk boil over; heat until just a warm simmer. Stir in vanilla extract and sweetener to taste. Cinnamon-Vanilla French Toast Serves 2 Ingredients: 2 slices of bread, preferably thick slice 2 eggs I cup fat-free milk 1/2 teaspoon vanilla extract 1/2 teaspoon ground cinnamon 2 teaspoons sugar Cut slices of bread into bite- size pieces and place in mi- crowave-safe bowl. In a mea- suring cup, beat eggs, milk, vanilla extract, ground cinna- mon and sugar until frothy.
